In this course we look at:
How you can eat amazing, tasty, ethical meat and yes, offal! Without breaking the bank, and what you should be looking for when buying it.
The benefits of having a good relationship with a butcher.
The skills to get the most from these more labour intensive but super rewarding cuts.
Demos and practical sessions will include:
We demo boning out, trimming, stuffing and cooking a free range lamb breast. The Chef Tutor will then marinate the ribs to tenderise them for a BBQ another day.
You will spatchcock a chicken and use various spice rubs to make tasty for cooking at home.
Your Chef Tutor will demo jointing a free range chicken. Then make a flavourful stock from the carcass from the giblets.
You will prepare and cook pork cheeks in the chicken stock from the jointed chicken carcass.
Preparing and make faggots from pork offal.
There will be plenty of tasting opportunities throughout the class.
Aprons and hot drinks will be provided in the class
